Our Philosophy

In January 2021, we took over the farm, beautifully situated at the foot of the castle of Ham-sous-Varsberg. Like the predecessor, we run the business according to the principle of free-range husbandry and feed our animals with the hay and grain that we grow ourselves. Animal welfare is our top priority: In addition to grazing, we follow the principle of suckler cow husbandry, where the calves are usually allowed to stay with their mother for around 8-9 months. In total, we give them at least 24 months to grow slowly on the basis of a species-appropriate, natural feed basis. On the day of slaughter, we attach great importance to transporting the animals as quickly and with as little stress as possible. The interaction of these factors makes the difference in meat quality.
